Southwestern Pulled Pork

I love this recipe... so good and so simple.

2 cans (4oz. each) chopped green chilies
1 can (8 oz.) tomato sauce
1 cup barbecue sauce
1 large onion, chopped
1/4 cup chili powder
1 tsp. ground cumin
1 tsp. dried oregano
1 boneless pork loin roast (2-2.5 lbs.)

Put roast in crock pot.... pile on remaining ingredients.  Cook on low 8-9 hrs.  Remove pork from crock and shred.... put back in and heat through.  Hmmm, Hmmm, Good!

The roast I cooked was a little over 4 lbs. so I doubled the ingredients.  Of course, I changed things up just a little too....  The best part..... leftovers!  Use it in burritos, sandwiches, eat it with chips or with rice and veggies...... so good!
